1 cup Sugar
¾ cup Water
Zest of 2 tangerines, white pith removed
¼ cup Freshly squeezed tangerine juice
4 oz. Chamomile-Tangerine Syrup
3 oz. White balsamic vinegar
4 oz. London dry gin
5 oz. Dry sparkling wine, chilled
In a medium saucepan, combine the sugar and water. Bring to a simmer until the sugar is dissolved.
Remove from heat and add tea bags, tangerine juice, and zests. Steep for a few minutes.
Combine the syrup, white balsamic, and gin in a bottle.
Slowly swirl or stir to blend.
Measure out 2 ¾ oz of the mixture into a champagne flute or cocktail glass.
Top off with sparkling wine.
