Lettie Teague, a columnist at the Wall Street Journal had never tried any wine preservation tool before. However, her curiosity to find out whether any of them really works prompted her to conduct her test. 

Teague tried out three devices for her experiment - Vacu Vin Wine Saver, Metrokane’s Rabbit Electric Wine Preserver, and Private Preserve Spray that contains a blend of nitrogen, argon, and carbon dioxide. Using six bottles of 2012 Famille Perrin Côtes du Rhône Villages, a bright and classic red wine, Teague tried out the devices on separate bottles. She then placed them on the refrigerator and waited for two days after tasting the wines again. 

On the first half of her wine test, the bottle of the Vacu Vin wine saver had the most aromatic and fresh taste compared to the rest of the devices. According to her, the wine used with a gas spray tasted like cardboard. Whereas, the one under the Rabbit wine preserver tasted fine but lacked aroma. 

The experiment continued for another two days. Again, the wine under the Vacu Vin wine saver tasted the freshest, with some hints of bright cherry aroma. The blog site, Distilled Opinion, found themselves asking the same question about the authenticity of wine savers. Compared to the previous experiment, this one did not use any other wine preservation tool. Rather, the experiment which lasted for five days focused on the Vacu Vin wine saver’s ability to prevent the wine from oxidizing and prolong its original taste and aroma. 

On the first day, the bottle of wine capped with the usual cork smelled less strong and more fruity. Whereas, the one with the Vacu Vin wine saver has a bright and strong taste. It also tastes brighter. On the fourth day, both bottles of wine have left minimal aroma. However, the Vacu Vin sealed wine tasted more like the first open with strong hints of fruits and acids.

  • The concern with removing air is that under vacuum, the volatile organics (I.e the aroma) will be more likely to leave the vine because of the low vapor pressure in the bottle. If you lose the volatiles, you lose the bouquet.
