4 Large fresh tomatoes
1 Cucumber
1 tsp. Sea salt
2 Cherry tomatoes, sliced
2-3 Flat-leaf parsley leaves
5 oz. California Pinot Noir
3 oz. Tomato water
Dash of sea salt
Ice cubes
Set a fine-mesh strainer with cheesecloth over a bowl.
In a blender or food processor, combine all the tomato water ingredients until smooth.
Pour over the prepared fine mesh strainer and cheesecloth. Transfer the liquid into a jar.
Let the mixture sit in the refrigerator for 8 hours or a day.
Discard the solids and use the tomato water accordingly.
Add the tomatoes and press the basil leaves at the bottom of the cocktail glass.
Fill the glass with ice.
Top off with five ounces of wine and 3 ounces of prepared tomato water.
Add a dash of sea salt.
